the wonderful Christmas bread




I am quite sure that there are a lot of Ernst-loving women, especially in Sweden and Finland, that have made this bread this Christmas. And I like the some what annoying but sweet Kirchsteiger, so I also made the bread! And it is wonderful! But be ware, it is powerful, nothing for a weak stomach; all the dried fruit and nuts and seeds gets the party started!

Ernst's wonderful Christmas bread

2 teaspoons baking soda
7 dl wheat flour
3 dl graham flour
2 dl coarse rye flour
1 liter of natural yoghurt
2 dl whole hazelnuts
2 dl shelled sunflower seeds
2 dl brown syrup
3 dl of dried figs or apricots
2 dl raisins
2 tsp salt



1. Stir baking soda and flours in a stainless steel bowl.
2. Beat in yogurt, nuts and dried fruit and syrup.
3. Grease a bread tin and instead of bread crumbs you can use
sunflower seeds or pumpkin seeds.
4. Pour the rather sticky batter into the tin. Do not fill the tin right up to the edge, because it ferments because of the bicarbonate. Leave about three cm up to the edge. Smooth the surface and sprinkle over some sunflower seeds or pumpkin seeds.
5. Preheat the oven to 200 degrees and allow the tin to stand for 60 minutes. Then, lower the temperature to 175 degrees and leave it in for another 30 minutes in order to avoid burning.
6. Take out and enjoy a fantastic good bread.
