Oh, the delicious colours of beetroot soup! It is very easy to make. I just threw the vegetables in the saucepan without measuring, so when you make it, just take as much as you wish of desired vegetable (I took so much vegetables that 1,5 l water almost covered when all ingridients were in the saucepan). Here goes my version:
Beautiful Red Soup
about 1.5 l water
2 organic herb stock cube (Herbamare has a good one)
Cut the vegetables into smaller pieces.
Firstly boil the beetroots and carrots in water with stock cubes for about 20 min.
Then add the potatoes, onion and garlic and boil for another 15 min.
Use a mixer to make the soup smooth.
I added some coconut milk for looks (to get a bit pinker soup:) and a little for taste.
Spice the soup with pepper, lemon juice and salt.
Add yoghurt for that little extra when you serve it!
